Galipot Eyes is based on a traditional Gouda recipe and matured for between 6 and 18 months, allowing its flavour and texture to develop beautifully over time.
Handmade at Brinkworth Dairy on our Wiltshire farm, this artisan cheese is crafted using fresh, pasteurised milk from our own herd. Slow maturation creates a rich, creamy flavour, a supple texture, and a distinctive natural rind that truly sets it apart.
The name Galipot Eyes comes from 17th-century writings by John Aubrey, who described the people of North Wiltshire in 1656:
“They feed chiefly on milke meates, which cools their brains too much and hurts their inventions… their persons are generally plump and feggy, gallipot eyes and some black; but they are generally handsome enough.”

I stumbled upon this cheese whilst looking for a supplier of good yoghurt whilst supplies local to us in N Yorks were disrupted. I chose it because it is long matured and was overwhelmed with delight upon trying it. Gallipot Eyes is a stunningly good cheese, excellent in taste, with a depth that only maturity can bring, and firm in texture. We bought 1kg and are about to buy another kg.
